"the aoc côtes-du-roussillon-villages latour-de-france is an appellation derived from the aoc côtes-du roussillon-villages located west of perpignan between the vineyards of tautavel and caramany.côtes-du-roussillon-villages latour-de-france must be a blend of at least two of the following grape varieties: grenache noir, syrah, carignan , and mourvèdre. The appellation produces only red wines with wild, spicy notes. Soil: clay-limestone and schist. Harvesting: manual harvest. Vinification: Extraction only by punching down during a long maceration of at least 4 weeks. Aging: 100% in barrels for 18 months. Tasting: deep, brilliant garnet-red color with violet highlights. The nose is open, expressive and complex, with notes of very ripe black fruits (elderberry, blackberry) and spices (pepper, garrigue). On the palate, a fine attack, with tight but silky tannins dominated by spicy aromas, plenty of body, good length and a very airy finish. Food & wine pairing: Catalan-style saddle of lamb."
