The grapes are destemmed. During fermentation, we punch down the cap 2 or 3 times a day. When only 75g/l of natural grape sugar remains, we add 96% Vol. wine alcohol to stop fermentation, called "Mutage sur marc". Maceration after mutage lasts around 10 days, followed by ageing in old barrels for 4 to 6 months, with early bottling.
Appearance
An elegant dark garnet-red color.

A pleasant nose of black fruits, blackberries and blackcurrant syrup.
