Vinification: The grapes are harvested when perfectly ripe, exclusively by hand. After pressing (about 6 hours), the must is cold settled. Alcoholic fermentation takes place over 2 to 3 weeks, using yeasts selected for the production of AOP Alsace pinot gris VT, and under controlled temperatures (16-18°C). No malolactic fermentation to maintain acidity. The wine is then racked, filtered and bottled after regulated ageing.
Appearance
Golden yellow with bright reflections.
Aroma
Very present aromatic notes, very fruity (candied fruits such as apricot), and strong notes of smoke and undergrowth.
Taste
Pleasant. Soft, round attack. The acidity gives it good length on the palate and brings out its aromas over a long tasting period.
