Laura borreli and bertrand querne have settled in vailhan, north of pézenas. Coming from Italy, they took over the vines of the former domaine rocaudy and its magnificent vineyard on limestone, schist, basalt...since their debut in 2016, the couple has been committed to retranscribing the "terroir" effect as best they can through straightforward, racy cuvées, without oenological products and limiting sulfur. Domaine Sauta Roc's cuvée va pensiero comes from small-grain Muscat vines. After hand-picking, the grapes are pressed directly. Fermentation takes place with indigenous yeasts in stainless steel tanks. The wine undergoes no malolactic conversion and is aged in stainless steel tanks. The nose reveals delicious notes of white flowers, apricots, pineapple, passion fruit and spices. The palate combines finesse, fruitiness and straightforwardness, thanks to a remarkable balance between round fruit and mineral tension. Incredible value for money! Our favorite
