Gourmet yet profound, sincere and fleshy, Une et Mille Nuits brings together five great traditional Languedoc grape varieties: grenache, carignan, syrah, mourvèdre and cinsault. Canet-Valette's Saint-Chinian? Why not? Yields of 30 hl/ha. Grapes destemmed. Hand-picked. Vatting from 70 to 90 days depending on the vintage. Pigeage au corps. Aged for a total of 30 months, including 24 months in foudre and demi-muids for 50% of the wine. Bottled without fining or filtration.
