Made from old Monastrell vines (between 60 and 80 years old), this cuvée takes its name from the vineyard's shadiest plots, which take the longest to ripen. All grapes are harvested by hand, and after vinification with indigenous yeasts, the wine is aged for 12 months in French oak foudres, then bottled for 1 year.
