Location: Loire Valley, east of Tours. Surface area: 30 HA. Vinification: Vinification combines pneumatic pressing, cold stabilization of juice and fermentation in temperature-controlled stainless steel tanks. Fermentation begins at 10°C, then rises in stages to reach 16°C. When the alcohol/sugar balance is optimal, cold fermentation is stopped and the wine is then kept on fine lees.
