The winemaker
The story begins in 1930. Pascual Olivares Fernandez was convinced almost a century ago that Monastrell (Mourvèdre) was capable of producing distinctive wines reflecting the character of his country. He began producing wine in small quantities to supply his region. Bodegas Olivares was born.
In the north-western corner of the Jumilla appellation, Hoya de Santa Ana is Jumilla's most elegant and expressive zone.
It has the highest altitude in the entire DO. This creates a climate that tempers Jumilla's hot days, but whose nights are considerably cooler than the rest of the appellation. Grape ripening is prolonged here, giving the wines better balance and more intense aromatic development.
In addition to Monastrell, Syrah and Grenache are also grown on the 275-hectare estate.
We are committed to keeping our winemaking process as natural as possible. All grapes are harvested by hand. Fermentation then begins using only indigenous yeasts. This method preserves the character of the grapes without masking it.
