The winemaker
Winemaking always starts in the vineyard and Exopto is blessed with 10 hectares of beautiful old vines which are divided into 15 micro-plots. Greater complexity is obtained by mixing the three main red grapes of the region: Tempranillo, Garnacha and Graciano. In the winery fermentation is done with indigenous wild yeast which helps preserve the regional identity of wines. The aging is then a combination of concrete tanks and French oak barrels, new and old.
