In a few words ...

El viejo, which translates as 'the old one', brings to the glass exactly what characterizes age: maturity combined with great experience. Deep cherry red with purple edges. The nose is very intense, with lots of black fruit alongside spicy, toasty notes due to 16 months' maturation in barrel. Full-bodied and fleshy on the palate. Ripe fruit, compote and toasty notes mark the taste and lead to an immensely long aftertaste.Among the vineyards of exceptional quality that exist in the do toro, matsu's technical director, raúl acha, selects authentic century-old gems from which to obtain exceptional grapes. These vineyards are between 80 and 100 years old, with very low yields per vine, and are cultivated according to the tradition of not interfering with the logical processes imposed by nature. This ancient philosophy, combined with privileged climatic conditions, means that viticulture here is practically artisanal. As a result, every year we obtain the tinta de toro, a Tempranillo grape variety that gives the wine an enormous personality. This grape variety is characterized by great finesse and high aromas, with a distinctive ruby color and low oxidation levels, enabling our wines to age for a long time.
