RIBOLLA GIALLA 2018 A testament to our art An ancient native variety grown on a 40-year-old vine forms the top of our current selection. ORIGIN Clay-marl soil (Ponca) 1 plot in Gonjace Year planted: 1980, 1981, 1983 Area: 3 ha GROWING METHOD Natural tending towards organic Manual harvest with grape sorting and optimized date selection through parcel-by-parcel monitoring of ripeness. WINEMAKING Long, gentle pneumatic pressing, decanting for 24 hours, followed by settling. Fermentation 65% in stainless steel tanks, 35% in 220-l barrels for 6 months. AGING after 12 to 18 months in stainless steel tanks, the wine is prepared for bottling. Homeopathic fining and gentle filtration are carried out if necessary.
