RAW MATERIALS 100% pure fermented grape juice - 100% PINOT NOIR Average age of vines ~50 years - Calcareous soils on Saint-Romain marl GROWING TECHNIQUES Low vineyard at 10,000 vines/ha. No irrigation, no pesticides, no herbicides. Working the soil: ridging, ploughing, clawing. Yield regulation by disbudding. HARVESTING Hand-picked. Sorting on the vine and in the winery. 90% de-stemming, light crushing. VINIFICATION Long maceration and alcoholic fermentation. Temperature control. Choice of racking for tasting. Alcoholic fermentation with natural indigenous yeasts. Rigorous monitoring by an oenology laboratory. AGEING Aged for 12 months in French oak barrels. 10% new barrels, 90% barrels that have aged from 1 to 6 wines. Malolactic fermentation with natural indigenous bacteria. Aged on lees and topped up weekly. BOTTLING Gentle filtration, then gravity-fed estate bottling. Selected natural corks.
