A garnet-red color with purple highlights adorns this cuvée. The first deep, gourmand nose takes us on a journey, with reminiscences of cherry, fig, licorice and leather. The ample attack quickly shifts to a freshness balanced by an opulent tannic structure, whose generosity is matched only by its finesse. The aromatic persistence is focused on morello cherry, plum and a subtle note of venison. The climax is a generous, round and suave finish. The Saint Eucher cuvée produced 2,500 bottles under organic viticulture on clay-limestone terroir. Harvested in the morning on August 31, it was sorted, racked at low temperature and fermented for 20 days. Decanted and filled for malolactic fermentation in 228 L and 450 L new and one-wine oak barrels. Aging lasted 20 months. Bottle 75 cl - 12.5 %.
