In a few words ...

Harvested at optimum sugar-acidity balance, destemming of grapes followed by vatting and immediate yeasting. Traditional fermentation at 25°c and maceration for 7 days with one short pumping-over per day. Short post-fermentation maceration of 4 to 6 days, followed by malolactic fermentation. After 3 months' ageing on fine lees, the wines are filtered and bottled. 100% Syrah. In conversion to organic farming, night harvest, use of sorting tables, fermentation in stainless steel vats, use of indigenous yeasts, classic vinification, clay-limestone soils, pebbly soils.

Fruité, persistant, arômes de violette, arômes de menthe, arômes de framboise, arômes de mûre, arômes de pruneau, arômes de garrigue, arômes de poivre blanc.

Crisp, intense, dense, morello cherry notes, raspberry notes, prune notes, elegant tannins, supple tannins, rounded tannins, round, mineral, structured body, good intensity, good persistence.
