The vines that give birth to Quincy wines are planted on an ancient Cher terrace of sand and gravel. As soon as the harvest arrives, the grapes are pressed and the juice is statically settled for around 24 hours. Alcoholic fermentation begins under strict temperature control. The wine then remains on its fine lees for several months, until bottling in April.
