    100% destemming (for greater suppleness and finesse). Direct pressing at low pressure (pneumatic press) to extract the best juice. After cold settling, fermentation takes place in stainless steel tanks at low temperature. Aging on fine lees lasts a minimum of 5 months. A single filtration is carried out before bottling.

    Beautiful minerality with citrus notes, excellent now but will assert itself after a year or two. A fine piece of work.
