During the month of January following the harvest, Maison Fonseca puts powerful, highly concentrated red port wines into reserve, selected for the most part from the company's own quintas and showing good potential for evolution. Aged to maturity in oak barrels, these wines lighten as their lees settle to the bottom of the barrel. Racking aerates the wines, softening their original fruity notes in favor of more complex, nutty aromas.
