Wine information: the Pinot Noir grapes come from the Les Poutures vineyard in Pommard. Located just south of Les Rugiens, near the village, this 1er cru is characterized by limestone, clay and silt in a humus-rich soil layer. The wine was produced in typical Lejeune style: each vat was filled to around 30% with whole grapes. The grapes were crushed with the feet to release enough juice for alcoholic fermentation to begin, triggered by the action of natural yeasts present in the cellar atmosphere and on the grape skins at harvest time. The whole grapes are then placed on top of the must. This phase of alcoholic fermentation lasts five to seven days and is known as semi-carbonic maceration, since many berries ferment whole rather than as pulp. The entire fermentation process lasts around three weeks. The wine is then placed in wooden barrels, with a proportion of new wood of around 30%. The wine is lightly sulfited before bottling, but is neither filtered nor fined. A brilliant, slightly transparent cherry-red, Les poutures has an approachable but initially restrained nose of red flowers and lightly seasoned red oatmeal for winter, some tanned leather and earth, tobacco, pepper and light balsamic notes. On the palate, the 1er cru offers an attractive extract with a fine sweetness that blends with notes of red berries and ripe cherries. Here, too, wood accompanies tobacco, leather, spices and vanilla. Tannins are present, but buttery smooth.
