Assembly : 33% pinot noir - 33% pinot meunier - 33% chardonnay. vinification : once harvested, the grapes are quickly and gently pressed. A first settling is carried out at the pressing center, then a second in our winery, at cold temperature (6°c), for 24 hours. Alcoholic fermentation takes place at low temperature (18°c) in temperature-controlled stainless steel vats, where grape varieties and crus are vinified separately before final blending. Malolactic fermentation is carried out on all our wines. After tasting, blending and bottling, the wine is aged in our cool, 33-meter-deep cellars. Each bottle is stirred by hand, in the traditional way, before disgorging and dosage. The wines then rest for a minimum of three months before being shipped. TASTING : The color is a beautiful straw-yellow gold. the nose is powerful, revealing fruity and floral aromas with hints of brioche and vanilla. On the palate, the attack is frank and dynamic, with harmony, pleasant freshness and real structure. a long, lingering finish.
