In France, Pinot gris is mainly found in the vineyards of the foothills of Alsace and the Vosges mountains. But it can also be found in southern areas, in the Languedoc plain, where it has recently been planted on a more limited scale. Our Pinot Gris comes from two different terroirs: - the Côte de Thongue in the Hérault region, whose grapes give the wine a rich, opulent character, - a particularly atypical terroir: the dry pond of Marseillette, a small village in the Aude department where our winery is located. When the waters receded several million years ago, a 2000-hectare salt pond was created. It became unhealthy in the Middle Ages, and was drained by man. The soil, which is highly filtering, light and sandy, still has the particularity of being salty. In order to be cultivated, it needs to be desalinated an average of three times a year by flooding. The entire pond is flooded at the same time by a system of canals; the water infiltrating the soil drains the salt away. The light soil and irrigation keep the grapes fresh. Summer heat, captured in this basin, favors early ripening of the grapes. Together, these two factors, ideal for Pinot Gris, produce aromatic, fresh and mineral wines.

This wine has a floral, fruity nose: notes of rose, lychee, lemon and grapefruit mingle with a touch of white pepper.
