"soil: the soil and subsoil are composed of ancient alluvium with numerous gravels and pebbles. viticulture: harvesting at maturity. Vinification: the grapes are pressed whole. The must is cold-settled for 24 hours. Vinification temperatures are regulated at around 18°C. Ageing: Fermentation and ageing take place in vats. Malolactic fermentation is blocked to give the wine freshness. Tasting: Pale yellow color with green highlights, limpid and brilliant. Nose of green apple, very floral, exotic fruit, citrus. Supple attack with lots of freshness, very aromatic (floral, candied fruit). Food & wine pairing : As an aperitif, with trout with almonds or seafood pastilla. Also great with white meats and cheeses!"
