Once the grapes have been pressed, the juice is poured into oak barrels (no more than 10% new). Here, a complex transformation begins: the yeasts naturally present in the grape juice transform the sugar into alcohol. Working with our "indigenous" yeasts, fermentations are long (3 months or more) and delicate (deviations are always possible), but it's one of those important stages that allow us to best reveal the taste of our terroirs in our wines.
Aroma
Gerbotte often develops citrus and white-fleshed fruit aromas, mingled with fresh almond and honey.
Taste
On the palate, the structure is lively and agile, reflecting the crystalline, precise expression of its terroir. A charming wine that can be enjoyed young.
