Our Moulin à Vent is produced in northern Beaujolais, in the commune of Chénas, very close to the existing Moulin à Vent. With a south/southeast exposure, the soil is composed of manganese-rich schist, which gives it its character, structure and elegance. Hand-picked, sorted and partially de-stemmed. An initial phase of semi-carbonic fermentation lasting a few days is followed by a period of regular "Burgundian" punching of the cap, for a total of 18 to 20 days of fermentation. Approximately 50% of the harvest is aged for several months in oak barrels, just to find the roundness and elegance for the final blending. This wine has the capacity to age nicely for 10 or 20 years if stored well. The fruity nuances will fade with time, while the structure will remain intact. Enjoy it at its best, between 3 and 10 years.
