The grapes are harvested by hand and transported in crates weighing around 16 kilos. Pneumatic pressing followed by cold settling between 16 and 24 hours, to eliminate coarse bourbes. Alcoholic fermentation in temperature-controlled stainless-steel vats for precise temperature control and cuvée homogeneity, followed by entonnage at the end of fermentation. Aged in 228-liter barrels on fine lees for 8 months, with occasional stirring of the lees (about twice a month) until malolactic fermentation. Tasting notes Robe: bright, golden yellow. Nose: floral (white flowers) and delicately spicy (white pepper) notes. Palate: floral attack on the palate. Almond and pear aromas follow, supported by good structure and aromatic persistence. Wine and food pairing Enjoy with a cassolette of snails, poultry or white meats, and mountain cheeses such as Comté or Beaufort. Ageing potential Already pleasant to drink, it will easily keep for up to 5 years in the cellar. Serving temperature Best served at a temperature of 13 / 14 °C. Vintage : 2017 In 2017, Burgundy is doing very well, in terms of both quality and quantity. After several years of harvests impacted by the vagaries of the weather, Antonin Rodet is back with a harvest in 2017 whose volumes will satisfy its markets. But that's not all! The wines already make you want to discover this elegant vintage. Having replenished its reserves over the winter, the vine took full advantage of the very summery spring, taking a lead from bud-break (early April) that it would maintain right up to the harvest. There was no downtime. By mid-June, the plots were in bloom, then very quickly in fruit. The precocity of the vintage was confirmed. The summer saw several heatwaves, alternating with more mixed weather. The lack of water made itself felt in some plots, even blocking ripening. However, rainfall at the very beginning of September boosted ripening in these vines. Harvesting began on September 6 in our vineyards and ended on September 20 for the latest plots. The sanitary quality of the grapes was very good, making the use of sorting tables anecdotal. There was general enthusiasm for this beautiful raw material, with its very satisfactory ripeness, and for the volumes harvested. The whites were picked with very good ripeness, and barrel ageing quickly produced wines with excellent balance.
