Viticulture: The vines are pruned to Guyot simple. Cultivation is traditional, with tillage. Harvesting: Menetou Salon rouge is made from vines around 30 years old. Average yield: 50 hl/ha. The grapes are destemmed before being transferred to stainless steel vats for light maceration. Vinification: Maceration lasts from one to two weeks, with light pumping over during this period. This is followed by devatting and light ageing in vats.
