In a few words ...
The grapes are hand-picked into harvesting crates. All the juices were vinified in the liquid phase, as the cuvées entered the cellar. We let the Melting Pot'es ferment without touching it: no pumping over or racking, no temperature control. Alcoholic fermentation proceeded slowly, due to the addition of juice over time. The cuvée was aged in stainless-steel tanks until spring, leaving malolactic fermentation to run its course over the autumn.
