Terroir : We benefit from deep-rooted vines that enhance the expression of terroir and the complexity of aromas. These old, low-yielding vines produce small grapes. We therefore benefit from a concentration of material that is interesting for color and tannin richness. Vineyard management: The Bouthéran hillside has been renowned for its distinctive terroir for several centuries, and has the elegance to marry well with the Saint Romain Gamay grape variety. It's in the spirit of terroir that this wine must be made and matured. Our Cuvée Vieille Vigne is selected from vines planted over 50 years ago. VINIFICATION: Hand-picked grapes are vinified as whole grapes over a period of 10 to 12 days. This maceration releases the tannins in large numbers to promote good structure. A temperature of around 30°C releases color and aromas. Ageing: After vinification, the wine is matured in micro-oxygenation to harmonize its various components. This Cuvée Vieille Vigne is interesting for its aromatic complexity, as well as for its structure, which consolidates the wine and allows it to age well. It will blossom all the more with a year in bottle.
