This wine is made from Malvasia from Istria, an autochthonous grape variety classified as a ZGP (Slovenian AOC). It is produced using traditional and natural methods, i.e. non-certified organic farming. ORIGIN Clay-marl soil (Ponca) 1 plot in Loke Planting years: 1980, 1984, 1985,1990 Area: 8 ha GROWING METHOD Natural tending towards organic Manual harvest with grape sorting and optimization of date selection through parcel-by-parcel monitoring of ripeness. 10% late harvest for butrite grapes. WINEMAKING Long, gentle pneumatic pressing, decanting for 24 hours, followed by settling. Fermentation 90% in stainless steel tanks, 10% in 220-l barrels. AGING After 12 to 18 months in stainless steel tanks, the wine is prepared for bottling. Homeopathic fining and gentle filtration are carried out if necessary.
