    In a few words ...

A pure, classic Cabernet Sauvignon that shows that this terroir could indeed also be known for its great red wines. Note that this wine, made from a Cabernet Sauvignon autoctone that comes from a massal selection, is the fruit of the marriage of Comte Latour, who brought this grape variety from Bordeaux when he married a noble Friulian lady. Clay-marl soil (Ponca) 2 plots in Locke, Bilje Planting years: 1980, 1985, 1990 Area: 2 ha, 6ha GROWING METHOD Natural tending towards organic Hand-picked, grapes sorted and date optimized by parcel-by-parcel monitoring of ripeness. VINIFICATION AND AGEING Grapes are destemmed and crushed, then hand-mixed in open vats (1000 to 1500 l). Traditional foot treading takes place every day for 10 to 14 days. Short, gentle pneumatic pressing, settling for 24 hours, followed by decanting and filling. AGEING after 10 months 75% in vats and 25% in 225-l oak barrels (70%) or 500-l barrels (30%), the wine is aged for 6 months in vats, where it is prepared for bottling. Homeopathic fining without filtration.
