Pressed as soon as it arrives, the wine is then cold-settled and fermented at a controlled temperature of between 16 and 18°C. Malolactic fermentation takes place naturally on the fine lees, to preserve the wine's full aromatic potential. The wine is generally bottled in the spring following the harvest.
