Harvesting: by hand in 13kg crates; sorted by plot if necessary; freshness sought. Vinification: no so2 added; de-stemming then blending in open vats by gravity; gentle extractions by punching down; indigenous yeast. Ageing: 8 to 12 months in non-plasticised concrete vats; aged on lees; no more than two rackings Bottling: light filtration; no fining; total so2 max. 30mg/L
