The method of maturing and blending the wine by parcel is based on the fundamental idea that a wine draws its richness from the natural components of the micro-terroir in which it is grown: soil type, grape variety, microclimate, sun exposure, aridity or humidity. This wine is made from two parcels of Saint-Emilion Grands Crus Classés: the first on old clay plateaus, the second on gravelly areas in the commune of Saint-Sulpice de Falleyrens. Fermentation at 30°C in concrete vats. Maceration for 25 days, extraction by pumping over and racking according to tasting, followed by a year's ageing on fine lees 80% in concrete vats and 20% in new barrels.
