Sylvain pataille is one of the most ardent defenders of the marsannay and chenôve terroirs, with the little-known clos du chapitre, located at the gateway to the Dijon urban area. Organic since 2008, the 17-hectare estate lost its certification in 2016 following the use of a prohibited treatment, a painful choice to save the few remaining grapes. Demanding, the winegrower works his vines with a horse, intervenes as little as possible, keeps a proportion of whole grapes and makes a point of ageing his wines for a long time, sometimes more than two years, almost without sulfur. The wines are sincere, endearing and full of vitality; they deserve to be more widely discovered, especially for their marvellous aligotés. Domaine Sylvain Pataille's Bourgogne les méchalots is a blend of 50% pink chardonnay and 50% white chardonnay. Today, Pataille is the benchmark in this exercise in style, which is to magnify the pink chardonnay grape variety.
