Originally from vesoul, jean louis tribouley hasn't always been a winemaker. After training as a carpenter, he became an association leader, then after a vocational baccalaureate in viti-oeno in Beaune, he set up in 2002 in the commune of Latour de France in the Pyrénées Orientales. The estate covers 10.5 hectares of vines, which have been organic from the outset and are classified as aoc côtes du roussillon village latour de france. 11 hectares of vines between 20 and 60 years old / 3 ha of carignan, 4 ha of grenache, 1.5 ha of syrah, 1.5 ha of macabeu, 1 ha of grenache gris. Arid, very stony terroir, often shallow, composed of one-third schist and two-thirds gneiss mixed with granitic arenes. No weedkillers are used, and depending on their location and slope, the vines are ploughed with a tractor or a caterpillar, pruned and/or mowed with a brushcutter. The grapes are carefully sorted into 13 kg crates. Vinification is traditional and yeast-free, with selection and sorting if necessary carried out in the vineyard, and as far as possible, only the grapes that could be eaten are put into the vat, followed by de-stemming, or not, vatting without pumping over, and maceration from 8 to 12 hours.
