Medium straw-yellow in color, the nose, like that of haut-lieu sec, is open, clear and fragrant, with aromas reminiscent of nashi pear and yellow apple pulp, acacia and orange blossom and a hint of honey. But even with this honey and the predicted sweetness, there's nothing heavy or exuberant about the wine; it seems danceable and light, but at the same time full of character and serious. On the p... alate, the 18 grams or so of sweetness are perfectly buffered by acidity. Despite its 13.5% alcohol content, the wine seems almost as buoyant as a kabinett, and that's fascinating. The demi-sec is so juicy, so creamy and at the same time so elegant, with finely chiseled acidity and a fresh minerality that, like all the components in huet wines, is not at all noticeable at first as an individual component, but only in the overall, ever-coherent composition. Here too, you want to keep pouring and quickly exhaust any reserves, even though the wine naturally has great future potential.
