Intense, full-bodied, sweet and fruity with notes of Morello cherry and raspberry. A portion of the grapes is separated before maceration and dried in a targeted, controlled manner. The dried grapes are added to part of the must to trigger a second fermentation. This gives the wine a denser, more expressive structure. The use of this traditional method, called 'governo' in Tuscany, combined with the most modern cellar techniques, creates full-bodied, structured wines with a unique character. Fattorie melini was founded in 1705 and is located in gaggiano, 300 meters above sea level, in the hills of chianti classico, on the road from poggibonsi to castellina. With over 500 hectares of vines, the estate is one of the region's medium-sized wineries, and has built up a strong reputation as a producer of typical Chianti wines vinified in a modern way.
