Accademia degli Acquavitai (Academy of Master Distillers) was a prestigious trading school in Venice which, from 1618 to 1806, was renowned for teaching the art of winemaking and distillation. To salute this iconic institution and revive a 400-year-old winemaking tradition, Bottega S.p.A is proud to name its sparkling wine line "ACCADEMIA". In the 17th century, Andrea Bottega, "the patriarch", cultivated vines in the hills around Refrontolo, the heart of the DOCG "Prosecco Superiore" zone. Today, the quality of Accademia wines is recognized the world over. Located in northeastern Italy, in the province of Treviso in the Veneto region, with low altitudes and gentle slopes, the terroir is composed of deep soils, conglomerates of rock, sand and clay. The Belluno Pre-Alps to the north and the Adriatic Sea to the south create an air flow that descends the mountain slopes at night, producing a cool breeze in the vineyards. This exceptional terroir provides the ideal environment for growing Glera, the native grape variety used to make Spumante Accademia prosecco using the Martinotti method.
