The estate was founded in 1977 by the rivetti family, with production initially focused on moscacato d’asti. Spinetta's vines are at least 35 years old, and no chemical fertilizers or pesticides are used: 75% of the vineyards are farmed biodynamically.moscato d'asti bricco quaglia is entirely produced from moscato bianco, grown on the 300-meter-high terroir of biricco quaglia, composed of limestone and sandy soils. Muscat grape juice is transferred to a pressurizing tank. Yeast is then added, but the tank is not necessarily sealed, as carbon dioxide is only released when fermentation is almost complete to reach the appropriate level of carbonation. When the desired alcohol level is reached (4.5%; 5.5%), fermentation is interrupted by cooling the wine. The second fermentation takes place in a pressurized tank with selected yeasts. The temperature is raised to 20˚c. Fermentation is stopped when foam begins to form and alcohol reaches between 7% and 9.5%, with average residual sugar levels of around 100 g/l.cépage: 100% moscato bianco (small-grained white muscat)
