The winemaker
All wines are vinified in indigenous yeasts and without temperature control. The range of three wines entry in red, white and Cerasuolo, rose 8 months in stainless steel vats and cement and capsule bottling screws. Since 2010, these three wines are also available in jars, for a production of about 10 000 bottles. The fermentation and maceration (1 night only) are held in amphoras, where wines stay for 9 months with little evaporation.
