Cognac matured in rum casks. VSOP quality Cognac is placed in barrels that have previously contained rum. The wood is impregnated with the qualities of the rum. The Cognac in turn extracts its qualities, until a gentle, gourmet balance is achieved between the Cognac and the rum. This refining in rum barrels softens the Cognac, making it more complex and gourmand.
