Making Aszú wine is a painstaking process, requiring a great deal of patience and knowledge. It is only possible in good vintages, when nature ensures rainfall in late summer and a sunny, windy period in early autumn, conditions that are indispensable for the process of forming noble grapes. The berries, swollen by the humidity, split, Botrytis cinérea settles on the skin, and noble rot is triggered.
