Vinification: Gentle infusion maceration for 3 to 4 weeks. Aged in 600-liter barrels of 2 to 3 wines for 12 months, then matured in stainless steel tanks for 4 months. This cuvée is sulfur-free, as we felt during barrel ageing that the wine behaved very well in its natural state and that we could therefore let it evolve naturally. The wine is bottled without fining or filtration. This cuvée presents a complex nose with a broad aromatic palette, ranging from ripe fruit to roasted aromas tinged with a subtle hint of chocolate. The full-bodied palate remains faithful to the nose, with supple tannins. Black cherry and licorice dominate, and the flinty terroir underlines the finish, with a hint of freshness that calls for another sip. Hécate will enchant you with dishes in sauce such as the traditional Bœuf Bourguignon, an exotic Tajine of turnips with dates, or pork cheeks with carrots and chanterelles. If possible, decant an hour before serving. It can also be kept for 7 to 10 years.
