Domaine As Clots is located in the commune of Cestayrols, in the heart of the golden triangle: Albi, Cordes and Gaillac. The vineyard covers some ten hectares divided into three islets on clay-limestone soils. Olivier Leclère runs the vineyard with the aim of respecting and protecting the environment. Find out more

The winemaker
At the Domaine As Clots, the vines of the indigenous grape varieties of the Tarn; Prunelart, Duras, Loin de L'œil, Mauzac are managed in respect of the cycle of nature.
The grapes are harvested by hand, then destemmed and lightly crushed.
Semi-carbonic maceration is carried out in 10 hectolitre containers originally used for cabbage fermentation in Alsace and here diverted to extract the quintessence of my micro-cuvées. After maturing on the lees in stainless steel tanks, this grape juice fermented with its own yeasts is then bottled without filtration or sulphites. The wines are produced in small quantities with very limited means, with a lot of care taken in the vineyard and the cellar. In addition, these wines are only available once.
The wines are off the beaten track; authentic, fruity and generous. Olivier Leclère describes these wines as follows: "My wines are made from ripe grapes with their own yeasts, with no added sugar, no oenological "make-up" and no brutal physical or thermal techniques. Nothing but the taste of the grape and the flavour of the terroir, everything is done naturally." To be discovered and tasted in the moment!
