The winemaker
Yasuko is Japanese, originally from Tokyo, and Guillaume worked for several years in Bordeaux in the vineyards.
From the moment they arrived at the estate, they had this desire to cultivate their vines and produce their wines with as few inputs as possible. Their wines have been certified organic since 2020, and the vines are cultivated biodynamically.
They want to get as close as possible to ancestral vine-growing methods, so they annually sow their vines with green manure (broad beans, red clover and cereals) and graze a flock of sheep to mow the grass.
They also plant hedgerows around their plots to maintain and restore biodiversity. For their future plantings, Yasuko and Guillaume want to combine vines with fruit trees, as was the case in the past (peach and plum trees), to avoid "monoculture". Thanks to their shade, the trees also protect the vines from the sun.
