Bergerac Moelleux Slightly over-ripe grapes undergo a long pressing cycle at low pressure using a pneumatic press. Alcoholic fermentation is induced by yeast. It takes place in stainless steel vats with thermoregulation (between 16 and 18°C). No sugars are added to the wine. The wine is aged for around 8 months in vats on 'Lies Fines'. After blending, the wine is fined, filtered, stabilized and bottled at the château.
