The grapes are picked mechanically. After 24 hours' pellicular maceration, the grapes are gently and progressively pressed in a horizontal pneumatic press. Low-temperature settling is then carried out. Fermentation can then begin. Fermentation lasts around 10 days, and is controlled at a temperature of 18 to 20 degrees Celsius. The wine is then aged on its lees until bottling in March.
Appearance
Pale yellow color with golden highlights, clear and brilliant.
Aroma
Beautiful minerality and citrus fruit on the first nose, which then gives way to an aromatic palette of white fruits and floral notes.

Taste
Light, airy attack, with the varietal aromas of Sauvignon. The mid-palate is quite round, thanks to ageing on lees. The finish is long, lively and taut.
