In a few words ...

50% of the harvest is picked mechanically, or in 30kg crates. Skin maceration lasts around 24 hours, then the grapes are gently and progressively pressed in a pneumatic press. After 48 hours' rest, the must is settled at low temperature. Fermentation and ageing take place in barrels for 6 months. A gastronomic wine.
