No vintage 75clMondeuse is a red grape variety, which also exists in white and has given its name to the wine it produces. This typically Savoyard grape variety has been grown here since ancient times. This spicy, fruity, tannic red wine ages remarkably well over the years. Mondeuse is best served with red meats or, as the old winegrowers did, with Tome des Bauges as a snack.
"Instead of the traditional approach (de-stemmed grapes, long vatting), Yves Girard-Madoux prefers a mixed approach, with one-third intact whole grapes, one-third crushed whole grapes and one-third de-stemmed grapes in the vat, all macerated for just ten days. In this way, he extracts spicy fruit (white pepper, blackberry) and silky tannins - "languorous" even says one taster - that support a long, melted finish."
