Tavel is a unique rosé thanks to a vinification process that sets it apart from all other rosés, and which is similar to that of a red wine: long maceration lasting 48 to 72 hours. After pressing, fermentations lasting 10 to 15 days are carried out at low temperatures (13°-14°). The result is a blend of free-run juice, which provides the necessary aromas, fruit, freshness and acidity, and press juice, which preserves its richness, structure and power. The result is a stylish wine, France's 1st Rosé.
