"le clos is part of chapoutier's "fac & spera" range. "fac & spera, make and hope, is the motto of the chapoutier house, and the philosophy applied to our parcel selections, which are the result of the selection of a specific parcel. Here, the winemaker allows the terroir to express itself unhindered, to achieve the exact combination of soil, climate and traditional know-how. It's a photograph of a grape variety in a given vintage on a given terroir. These are exceptional, rare wines, created from our oldest vines. Here, biodynamic viticulture takes on its full meaning. "soil: brown soils derived from coarse-grained granite with black mica, fractured and locally altered.harvest: bunches are cut and transported in small crates to the winery.vinification: alcoholic fermentation takes place in a small 30 hl concrete vat, with a long maceration of around 5 weeks.ageing: entirely in barrel for around 20 months (25% new barrels).tasting: dark garnet-black color, rich with violet highlights. On the nose, lovely notes of black fruit (cherry, blackberry), beautiful minerality with hints of graphite. On the palate, a suave, rich and elegant attack. Very fine, silky tannins. Lingering finish with aromatic notes reminiscent of the granite terroir. Food & wine pairings: small game (pheasant, mallard with Morello cherries), duck breast with cranberries, woodcock toast.
